'Tis the Season for…Blini With Caviar
The holidays present a number of opportunities to impress your guests. This classic combination of blini and caviar is the perfect example — indulgent, elegant, and delectable to the extreme. If you are hosting a small crowd for drinks, it's all you need to serve.
PAIRING: Avissi Prosecco Sparkling
Blini
2 large egg
1 cup milk, at room temperature
2 tablespoons butter
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Topping
1 cup sour cream
2 Tbsp. fresh dill
4 to 6 oz. caviar
Step 1
Whisk together in a large bowl egg, milk, and salt. Sift together flour and baking powder and fold into egg mixture. Whisk until smooth and free of clumps. Preheat a griddle or large frying pan and add a little bit of oil. Use 1 tablespoon batter for blini and fry them over medium heat until golden brown, turning once.
Step 2
Combine sour cream and dill, spread on blini and top with caviar.
